The Benefits of Sous Vide Cooking
A financial professional with more than a decade of experience in business growth, financial analysis, and loan underwriting, Sebastian Palazio most recently served as the managing director of Abinger Capital in New York. Outside of his responsibilities, Sebastian Palazio enjoys cooking, and he recently bought an immersion circulator to cook sous vide.
Sous vide is a relatively simple cooking technique that involves placing a vacuum-sealed pouch of food in a water bath to cook. Below are a few benefits to cooking sous vide:
-Consistency. Due to the unique way food is cooked using the sous vide method, it is easy for even beginners to accomplish. It requires precise temperature control so a dish made repeatedly comes out the same way each time. Plus, cooking sous vide ensures food is cooked evenly all the way through, so cooks do not have to worry about overcooking or undercooking their meal.
-Enhanced flavor. Since food cooked sous vide is sealed inside a bag, the flavors and juices from it are locked inside the bag. This means the food cooks in its own juices rather than having them fall through a grill grate or onto a drip pan. The presence of the natural juices not only prevents dehydrating but also helps the food maintain its natural flavor and aroma.
-Healthy. Many foods lose minerals and vitamins through regular cooking methods. Healthy fats are often burned off with high temperatures, while antioxidants and vitamins may dissolve in cooking liquids. However, sous vide food retains these essential nutrients. Not to mention, the better flavor of sous vide food means chefs need smaller amounts of salt or fat.

Pedaling for Change in Nicaragua Kicks Off on January 29, 2017
A financial professional, Sebastian Palazio most recently served as the managing director of Abinger Capital. In his spare time, Sebastian Palazio enjoys supporting Empowerment International.
Empowerment International will kick off its Pedaling for Change in Nicaragua tour on January 29, 2017. The event will be the third time the organization hosts a fundraising bike ride. The week-long tour supports the organization’s sustainability plan. All proceeds benefit the non-profit’s programs that provide educational opportunities to children in underserved communities.
Riders will travel through the Nicaraguan countryside. For the best experience, the organization plans on utilizing trails least traveled to guide participants around the Masaya volcano and Laguna de Apoyo, a volcanic lake. Riders also get to take in sites of waterfalls in Diriamba and enjoy hidden watering holes that are popular with locals. Other attractions include a ride in the San Juan del Sur where the film Survivor was made and a visit to Lake Nicaragua.

Educational and Activity Center Supports Children in Nicaragua
Former Abinger Capital managing director Sebastian Palazio possesses over 15 years of experience in the financial services industry. Outside his work for the company, Sebastian Palazio supports educational initiatives, such as Empowerment International (EI), which focuses on breaking poverty cycles in Nicaragua through programs that include the Educational and Activity Study Center.
The Educational and Activity Center operates with the purpose of providing a safe, inviting place for academic study and support for children within the Nicaraguan community. Fully equipped with computers, reference books, Internet access, and other study essentials, the center offers children all the necessary resources to further their education and pursue academic success. Children can use the center for school research, computer skill improvement, and to socialize with friends and schoolmates. Furthermore, children receive the support and encouragement needed to stay in school.
In addition to its openly available resources, the center schedules regular tutoring sessions for children in first through fourth grades. Children who participate in the sessions receive access to a children’s library, read books in small groups, and work with older secondary-student volunteers. After the sessions, they are welcomed to stay at the center to play with educational toys and practice important social skills, such as sharing and conflict resolution.
The center’s strategic location on the outskirts of Villa Esperanza makes it easily accessible to all children within the community.
